Description:For our 5 year vintage, we were looking for: The fine and discrete presence of fruity tones to add lightness, together with woody tones to provide structure.
And to achieve our aim, we begin ageing in new vats, moderately burned, conferring a distinctive nose and delicate vanilla taste, typical of our "5 years old", together with an elegant little hint of apple. Ageing is then continued in older vats, with a gentler woody influence, making way for the slow and progressive maturing of fruity tones.
